Wished I could tell ya how to cook them. It's been 25yrs since I've eaten them. A friend of mine's mom use to cook them up for us when we were younger and they were great. And yep, go good with scrambled eggs.

most roes can be cooked the same way as shad and be as good or sometimes i think better
I'll eat roe from any size fish from slab crappies, Yperch, Wperch, up to herring. But shad roe is just too much for me. Since I am the only one in the house that eats roe a lot of the shad roe would go to waste. I definitely like the bite sized roe over the big slab of roe you get from shad. I generally roll the roe in flour then fry in butter, pretty easy.

I would be pleased to take some of those nasty shad roe to the dump for you, HJS.

I had some YP roe last week from the one big fat female I kept. I did not cut into the sack it is in. The sack of roe was about the size of a Twinky. I had fillets frying in butter and rolled the roe bag in flour and put it in the same pan with the fillets. It cooked a little longer and I had to roll it to get it coked from all sides and get the middle warm. Then I sliced it and ate it with the fish. It was a little stronger flavored and a grainy texture but the best part of the meal. With shad I always broke the sack and fried it loose.

I tried perch roe once, cooked the same way FishFarm did it and I agree it was stronger flavored and a grainy texture. I don't think you could get me to try it again....

Fried in bacon grease, drizzled with lemon juice then served over a spring salad. Add a little vinegar to the bacon grease while it's still hot and use as dressing.
