To heck with shrimp and grits, this stuff rocks.
Start with 2 pans,
First one containing butter, 1lb p&d shrimp and 2 cloves dice garlic . . . cook till pink.
Second one, over med/hi heat add olive oil, 3 cloves diced garlic, half a large sweet onion finely diced and two tbs butter. Add one cup sliced mushrooms. Add one cup Rozzoto rice and start adding stock. Do the standard rozzoto thing ( add stock and stir) for the next 26 minutes. Test rice often for doneness, when the rice is ready, finish with 2 tbs. butter, hand full of chopped spinach and the shrimp. Dayum fine eatin' right there.
