I'm looking at the Raymarine X-5 sport pilot for my 23' Grady. My main use would be for trolling, because I often fish solo or with my wife.* Is anyone using this autopilot? I'm also open to any other suggestions for a inexspensive autopilot.

Thats a lot better AP than the S1000. I had the Raymarine S1000 in my 232. It worked great for trolling at speeds over 3 kts. Since it used the GPS for course information the software was tuned to disengage if speed was detected below 3 kts. I also went through two pumps because I used it often when at crusing speed, it was just not made for that. I didn't take a close look at the x-5, but it looks like a much better system at a quick glance, so I suspect you will be fine.

This looks like a more cost effective system than going with the SmartPilot Controller. At the boat size (even with twins), you are within the specs of this system. It doesn't seem to have some of the more luxurious features, but not many people are able to use their electronics fully anyways.
I would give this system a real consideration. It is likely one of the cheapest out there. Should be more consistent and reliable due to not relying on a "mini" hydraulic pump, and the added benefit of a rate gyro built in. If you are set up with other raymarine equipment, you may be able to control it directly from your MFD.
Given your boat size/style and the intended use, I would say go for it. I have installed many Raymarine autopilots, and always had good experiences with them.
