well had my first experience with catching triggers down in hatteras this past tuesday and wednesday, they are a really fun fish to catch and i never imagined i could catch triggers straight off the beach. despite being a fun fish to catch, they have some of the toughest skin i have ever seen in my life and cleaning them was a task til i got the hang of it

anyways i heard these fish were excellent tablefare.....anyone have any recipes for cooking triggers?

Just a bit of butter or oil to get the pan/tray moist, some Old Bay and salt on the fesh and put in the oven. Good eating!

Trigger Fish are delish! Used to spear them at the near shore wrecks off of NC.

I'm not sure how you finally ended up cleaning them. I had a guy show me what I still do some years ago.
1)Don't even try to scale them
2)Get a Hooked Blade for a utility knife
3)Go along the outside of the fillet, top and bottom, just through the skin
4)Grab the skin with needle nose pliers and peel it off
5)Remove fillets for breading and frying or saute in butter

I usually skip step #4, leave the skin on, marinate lightly and grill.
The skin holds the meat together until they're done and then it will flake right off.
