I know most of you guys are the experts in crabbing and crab eating. My question has to do with the meat, say if I ended up with more crab than I could eat and decided to pick the rest, is it still okay to freeze the meat for a later date? I know I do it with my fish, I just have not seen it done with crabs or crab meat. All suggestions are greatly appreciated. This was spurred by Crabbermanjl, man I am jealous of them right now, great catch.

Sure - there are many posts on this board about different techniques for freezing. Many swear by the vacuum sealers, but we use zip lock freezer bags and freeze the meat in milk.

the trick is to not rush the thawing... Let the meat thaw in the frig and it's good as new....
we make crab cakes and freeze. nothing like ready to go crab cakes.

I keep hearing about adding milk in the crab meat then freezing. What is the benefit of adding milk?

I add milk and salt to RockFish when its first caught for a day. The salt draws the blood out and the milk supposedly sweetens the meat. I have never heard of adding it to preserve crab meat. Is it a preservative?

I know that the milk will remove any iodine taste that the crab or shrimp may have. I always soak my raw shrimp in milk for 30-minutes, before frying them or using them in shrimp scampi recipes'.
I have often heard of using milk when freezing crabmeat, but no one ever gave the amount to be used, let's say for a pound of crabmeat? ?

I appreciate the advice, especially the crab cakes, didn't think about those. I have never heard of using milk either, and Riptide also asked about how much milk for a pound of crabmeat? Anotehr question, has anyone canned their own crab and froze it, or does everyone use the air tight freezer bags? Just seeing what works and what doesn't.
