Another post reminded me of something I've wondered about and never thought to ask...
When grilling fillets with the skin on, do you bother scaling them?

ONLY if you are NOT going to eat the skin it self. I grill them all the time and keep the scales ON. My lab LOVES to gobble them up afterwards. Plus the scales help to firm up a base for you. Just spray a little pam on the grates before you start, it will flare up a little but thats all.

They call it fish on the half-shell...
The scales help protect the fillets, especially on smaller fish like croaker or trout. Scale side down, don't turn it, just cook it on med/low. Slather with melted butter, salt, pepper and cayenne pepper with a squeeze of lemon YUM!

Agreed (I see a Spadefish)
Never with a Spade or a Trigger. Always with a Rockfish or a Trout (I like to eat the skin!)

Skin on is the way to go. Scales are good...
