Looking for a deer butcher in Northern Neck or Fredricksburg area that does summer sausage/jerky etc.

Make your own summer sausage. Here is my recipe:

for every 3 lbs of deer, grind in 1 lb of bacon (Grind it together on the coarse setting)
spread the meat out little bit on a table.
Add2 tsps ground Sage
2tsps mustard seed
2 tsps ground thyme
1 tblespoon oregano
2tsps black pepper
2tsps cayenne pepper
Garlic satlt to taste ( generally 1 tablespoon )

Mix together and run through the grinder on the medium setting.
Awesome patties, or you can run it into a skin.

If you are a good boy, I'll give you my Jerky recipe, which requires no special equipment other than a knife and stove.

I'm also looking for a deer butcher who will cure and chip the meat. It looks like and tastes better than Chipped Beef" sliced very thin. Anybody know of a butcher who does that. Several years ago I tasted some that a butcher had done in Carroll County, but I can't seem to find him. Appricate any help, thanks Capt. Kerry.

Sam Poole does this and he is in Carroll CO. 2060 Bollinger Mill Rd. Finksburg, MD 21048
He is located off of RT 32 about 5 miles north of Rt 26. He does a great job with many specialty items.............Gary

Silver Ridge does a nice job if you are just looking for burger.
