View Full Version : Venison roast still fresh from Saturday?

Various distractions have kept me from cooking the rump roast I was given from a Saturday morning kill. Think I will be alright cooking it this evening? It has been refrigerated and wrapped in butcher paper. I'm going to do a stew.

Should be fine as long as it was kept cool, smell it is there any discoloration? smell it again. stew meat is cooked for a while too.

As long as it has been kept cool and wasn't allowed to sit out then get cool again you shouldn't have any bacteria problems.
I have a batch of smoked sausage and jerky going right now..MMMMMMM MMM good.
also cooked a couple slow roasted sirloins this morning that
I initially took all of this meat out of the freezer and into the fridge on friday then cut it up last night and it spent the night in the fridge last night....it's the re freezing after sitting out that is bad for meat.

Last I heard, you are supoosed to freeze wild game for 30-60 days to kill odd any parasites in the meat before cooking. I always do.

For years now, I age my meat in the fridge for 7 days before freezing, in a heavy plastic bag. After about 3 days I change bags. I have done it in a cooler when the weather has been colder, but ice is so expensive. I think your meat should be fine, also as hot as it's been the meat needs to go in a cooler or fridge as soon as it's butchered. I don't soak mine as long as it's not shot up. The cool thing is after 7 days you can get the sinue off the back straps by sticking your thumb under it and pushing.

I am eating my first bowl of venison stew I made. I guess I should know in an hour or two (with my stomach) if it was bad. It smelled OK, was not dark at all when I cut it up. Tastes OK now.

i killed a 5 pointer yesterday and just ate one of his tenderloins. threw some salt on it then turned it over a few times in hot oil. still very rare. i know a lot of people are really cautious about eating that way but that's the way i like it and it's never given me a problem. i figure if i can eat rare beef then i can eat rare venison. at least i know where it came from and where it's been.
