View Full Version : Grilled Rockfish tacos

I had a craving for some fish tacos the other day, so i grabbed a couple filets of Rock from the freezer and thawed them. I looked around online but couldn't find a recipe that i thought i would really like, so i decided to wing it and experiment a bit on my own.
What i came up with turned out purt darn good!:yes:

Take 2 thick rock filets, cut out the bloodline and soak them in a bowl of milk for at least half an hour, this takes the strong fishy taste out of the bigger fish that might taste a little strong.

After soaking in the milk, pat dry with a paper towel and lay filets on a plate. Sprinkle both sides of filets with garlic salt and old bay seasoning, then baste both sides of filets heavily with Italian Dressing.
Start the grill and let it warm to about 300. Grill the filets on each side til they are done in the center, and blackened on the outside.
As a sidenote, i cover my grill grates with tin-foil and spray the top of the foil with olive oil, or some type of non-stick cooking spray, this keeps the fish from sticking to the foil and falling apart when you flip the filets over. Works great for me.

When the filets are done, serve with taco or tortilla shells, shredded cheese of choice, lettuce, tomato, and salsa (i like white corn & black bean salsa).
