When you refer to quality and the moon most people equate that with the amount of meat in the crabs. Generally speaking the majority of crabs shed during the full moon. After a shed crabs are at their lightest until they start filling out. If you are referring to the taste of the crab in my opinion they are at their best about a week prior to the full moon. My guess is that they slow their metabolism down prior to shedding and eat less. Burning up some of the fat which is the mustard. Not sure why or if it affects the taste but crabs have a sweeter and mustardy taste a week prior to the shed.
