Went out at first light on Tuesday under a line of thunder heads to Windmill Pt bar. Several nice 18-20 inch macks on green drones. Foot and a half rollers near the light sent me back up into Fleets Bay with two more hookups and back home to salt them down for this winter.

whats your method for salting? how long do they keep? and how do you prepare them in the winter?

I use my own method of salting which seems to work. I fillet the macks and cut the fillets in half. Put 1/2 inch layer of table salt in the bottom of a 5 gallon plastic paint pail and place 4 or 5 pieces of mack on the salt, flesh side up, skin down. Cover the fish with salt and keep going in that manner. I hide the buckets in closets that are not too hot, ie no heat registers in them. they keep most of the winter. to prepare, soak the fish in cold water for a day at least. change water several times. boil the fish and serve with eggs, grits and biscuits. if you have some good country ham, serve that as well and throw out the fish.
