Hey, my gf rents a house down in Islamorada and has a dock on the Gulf side of the island. We have been able to catch pinfish and gray snapper, a few sharks, and catfish...but I was wondering if you guys had suggestions on what to use/do to increase our variety in fish we catch

Google/Bing Boatless fishermen...these guys fish from shore all over s. florida they can hook you up literally

What are you using now? Try using the pinfish live on a float. Also, butterfly them and put them out there - bottom or on a float. Cast a few lures as well.
What you're already catching is pretty par for the course on the Gulf side from sure. You may grab a nice barracuda or a tarpon with the pinfish for bait.
