Dayton you are just too much. Did you get your boat fixed? I just talked with my father about the homemade sausage. He was 69 on Nov 17th and fell a week or so prior in his wood pile. He broke his right forearm bone away from the elbow. He has been pretty gimpy since then but is recovering nicely. I made up one hog for him the Tuesday before Christmas. We will probably do another not this week but next Tuesday - Thursday. My dad is right handed and crappie fishes with a 14-18ft one piece bamboo pole. About the middle of Dec he hooked a 7pt deer that had been hit with a buckshot through the esaphagus. He heard a splash, looked to see the doe running up through the woods. Looking closer her saw the buck swimming towards him. After missing twice he hooked the top lip and drowned the deer by keeping it in deeper water. It would try to lunge up the bank once he was in shallow enough to touch bottom. My dad said the deer gasped for air and finally he got a mouthful and drowned. My nephew helped him after a phone call with one arm holding the pole to keep it from sinking. They have it recorded from the time they started getting it out the water. The man who shot the deer came out of the woods after they had it on the bank and said, "Hey, that's the deer I shot". My dad replied, "That's the deer I killed". For those of you who know me as a crazy country redneck, you are right. My dad on the other hand is a Southern Baptist preacher of some 45yrs and is just about as crazy as me for I had to get it from somewhere, right? homemade sausage?...hehe thats what i been making all day....made 10 lbs...half cajun garlic and rest garlic/jalepeno :P...damn wish i had a smoker:(

Is that pork or venison? Its a pretty site with the added spices showing through the casings. We make it in loose bulk amounts. Ground twice while the meat is still warm from the slaughter. Mildly spiced and packaged in 5lb lump amounts. My dad has produced several thousand pounds a year for some 25 years or more. He'll put maybe 30lbs a year in the casings and smoke it like bacon or ham. Ask Dayton or Tank when you get a chance if they thought it was any good. When I was in high school a man approached my dad with the financing to go big and he turned the man down. As I mentioned above, daddy is a preacher and his reason for turning down the offer was he would not work on Sunday other than to preach. With meat lockers you have to check on it at least a few times a day to make sure everything is running properly. The man was greatly disappointed and rightly so. This recipe would not run Jimmy Dean off the shelf, but some room would have to be made once it hit the market mainstream. Next day tournament I fish I will try to get together some sausage biscuits to pass around. Later for now---jonnycat

its pure pork sausage...its the first time i've made pure pork sausage..i usually make "boudin" which is a rice and cooked meat sausage.......these are 2 sausages made by a local supermarket in my hometown that i've eaten all my life...i've tried to copy to them as much as possible......for the first time i've made it.. i have to say it pretty damn good...from taste testing on a gas grill and frying in a skillet...cant wait to taste them on a charcoal grill or smoked..

What are you looking for a hot or a cold smoker?

i'd prefer a cold smoker.....been thinking about just building one out of a old refrigerator with a firebox off the side piping in the smoke.

I never tried it, but I gots plans off of the internet that seemed simple enough. I just went with hot smoke. I didn't want to fool with all of the chemicals that you need for cold smoking.

I heartily recommend a smoker to anybody contemplating one. They rock. Real southern bbq, brisket, etc. I just pulled 2 pounds of bbq out of the freezer yesterday. Love it.

I have a Weber Smokey Mountain. The guy who runs this website makes it practically foolproof to mess any meat up with his well documented recipes, meat selection, preparation, smoking times, etc. Everything is calibrated towards using the Weber Smokey Mountain grill too. Wish I had some of that sausage though.

Did someone say Boudin?!?! Man! I love that stuff. It's been wayyyyy too long since I've been down to LA for some good ole' Boudin'!
Know if anyone is Hampton Roads area sells fresh Boudin?

Boudin is the reason why i bought sausage making equipment lol...i was going through withdraws up here in Va. without it.... if ya like boudin..check out this website www.boudinlink.com ...2 guys from lafayette who go around and taste boudin and then write reviews on it,.....a few of these places will package and ship you some boudin also:) i dont know of anywhere in virginia that sells boudin...yet:)...maybe in a few years you can come to "Kajun's specialty meats" and buy some :)
