    Default cream of crab soup?

    I've already made the traditional MD style several times this fall, but figured i'd go a little more "fancy" for Christmas this weekend. Anybody got a good recipe? Capt Dale? Jerry? Thanks ahead of time!

    CREAMY CRAB SOUP


    1 pound crab meat, picked
    3 tablespoons butter
    2 stalks celery, chopped
    3 tablespoons flour
    2 cups milk
    2 cups half and half
    2 chicken bouillon cubes
    1 teaspoon Old Bay

    • Heat milk, half and half and bouillon cubes to almost scalding, stir often to melt cubes and keep mixture from sticking to pan.
    • In another sauce pan, sauté celery in butter, add flour and Old Bay, stirring constantly.
    • Gradually add heated milk to flour mixture, stirring constantly until thickened.
    • Add crab meat.
    • Heat until thickened.
    Refrigerate any left over soup. It always tastes better the next day.

    a similar but slightly different recipe

    1 lb crabmeat
    1 stick margarine
    1 cup finely chopped onion
    1 cup cup finely chopped celrey,,leaves & stalks
    3-4 cubes chicken boulion-you can substitute any equivalent of
    powered or liquid boulion
    3 cups milk
    3 cups half & half
    1/4 cup flour
    1 cup shreded monterey jack cheese
    3-4 tablespoons sherry
    1/2 tsp ground red pepper (you can use more or less to taste but it
    should have some zip to it)
    1 tsp salt or to taste
    ------------------------------

    sautee the onions & celery in margarine until vegetables are done ( do not burn)
    add flour and stir to make a roux (about 5 mins)
    add milk & half & half & boulion & salt and heat slowly to just below boiling (stir to keep from burning)
    when hot add crabmeat & allow to heat
    add cheese and allow to melt
    & add sherry & stir in ground red pepper
    serve

    always better the second day

    Capt Dale's Cream Of Crab Soup



    1 Stick of Butter
    1/2 cup of pancake mix
    2 cups chicken broth (1 can)
    1 Qt 1/2 & 1/2
    1 cup Milk
    1 Tablespoon Old Bay
    1 Tablespoon Parsley Flakes (spice or fresh)
    1 Tablespoon Dry Mustard
    1 Tablespoon Celery Flakes
    1/2 Tablespoon onion (spice)
    1 LB Crab Meat


    In a large saucepan & LOW HEAT melt butter stir in Pancake mix slowly stir in one can of chicken broth and simmer for 2 minutes. Slowly stir in 1/2 & 1/2 and milk. Add seasoning stir till thickened. Add crab and gently stir till mixed being careful not to break up lump meat.
    Serve with Sherry on the side
    6-8 serving
    Enjoy.

    Dale,
    Is the Cioppino a soup or main dish? Sounds heavenly!
    If you don't go, you won't know and you gotta have bait in the water!
    I have terminal Crabiteis and there is no hope.

    Dave-"Cioppino" is a coastal Italian "Zuppa di Pesca" (Soup of Seafood) with a tomato
    base. It was made popular at the wharf's in San Francisco.
    John- I have several different ones I wish to take from this one an add to that one first then i'll post the one a made. In the mean time go to www.Epicurious.com look for Cioppion San Francisco-Style Seafood Soup.

    Thanks for the recipes guys- I took a little from each of the recipes and made a batch last night. From my preliminary tests- I'd say it's gonna be a big hit! It's that good Chesapeake Bay MD crab meat that makes it though, IMHO. ;)
