    Default parmesan seared flounder

    made this last night with cheesy scalloped potatoes and collards -insane



    12
    ounces flounder fillets

    1/4
    cup Italian seasoned breadcrumbs

    3
    tablespoons grated parmesan cheese

    1
    teaspoon garlic salt

    1
    teaspoon grated lemons, rind of

    2
    Egg whites, beaten

    1-2
    tablespoon olive oil

    1-2
    tablespoon lemon juice (or use amount of juice from small lemon used above for lemon peel)

    Fish Main Dish
    Reduced Carbohydrates Main Dish
    Rinse fish and pat dry.
    Combine bread crumbs, parmesan cheese, garlic salt, and lemon peel on waxed paper.
    Dip fillets in egg.
    Coat fillet with crumb mixture.
    In nonstick skillet, heat the oil over medium heat.
    Cook fillets for 2 to 4 minutes per side or until fish flakes easily.
    Sprinkle with lemon juice.
    When removing fish from skillet, use a spatula or the fish will fall apart.

    Thanks for this one Gus it's a winner, had it with sauted spinach and a rice and shrimp dish.
