Do you eat Amberjack?

I'll eat most anything... BUT an Amberjack. I kept one ONCE.. marinated, baked w/ cheezy sauce... took one bite and spit it back out on the plate. Took it to the kennel and the dog wouldn't even eat it (and he's been know to eat his own... well, you know).
