    Default Sheepshead

Does anybody have a good recipe for sheepshead? I've heard they are very good to eat and I have some thick filets in the fridge waiting to be cooked.

Excellent just marinated in italian dessing and grilled.
I often wonder... do I lure the fish, or do the fish lure me?

Dude, i know its way late now but i couldn't help but to reply
    so easy...
    simpler the better
    cook on grill
Give it a quick marinade, put the fish in a little olive oil (higher quality if you got it) add some herbs of your choice...i like parsley the best but even bit of rosemarry or basil would prolly work... can throw in some seasoning hear if you want (i usually use as little as possible to keep the dish from being salty) throw the fillets on the grill close to hot flame while letting it get cooked nice and glazed over on all sides...so move quick if you got 8 big pieces...then before they edges start to burn or blacken throw them on the top rack to let them cook in the middle....serve with citrus fruit at table (i like lime). The firmness is unreal and great taste hard to beat....also it helps have big fillets...we catch our fish on outer banks on bridges average fish is 5 to 8 lbs and def. some all around the 10lb range...then again you got to fish the trophy baits for da trophy fish ;)

    good eats

    Default killer

Take fillets and dip them in melted butter, then roll them around in a good italian breadcrumb place in oven on 350 for about 20 minutes.remove from oven and grate some good parmasan cheese over fillet replace back in oven until cheese is bubbly and brown.serve with a cold glass of duplin muscadine wine (hatteras red) ENJOY!!!

A good way to use your turky fryer when it's not Thanksgiven. Just heat up oil to 350 F. and lower your hole fish slow right in the pot. Make sure you egg the fish/bread cromb first. Sabroso!
