Had a good day on the Potomac Tuesday.f
Start with a solid white filet of at least 1-1/2 inches thick. Blend 3 Tbls. sp. Mayo and 1 Tbls. white wine. grease a small baking dish with butter, or if more than one diner, an 8" X 8" glass baking pan. put in a few slivers of onion. place fish filet on top. cover with mayo sauce. sprinkle with taragon, parsley and a little oregano. I had all this fresh from the garden. Add i Tbls. white wine for each filet. springle with Old Bay.
Bake at 425 for 20 min.
Filets need to be thick for this much heat for this long. Shorten time for thinner filets.
My wife is not a fish lover but she said it was a meal you would only get at a 5 star restaurant.
FYI, wine was a Syval Blanc from Vault Fields in Kinsale, Va. This is a 1st. class wine from a top shelf winery. These people do no wrong.

That sounds awesome! My parents have a recipe with homemade bread crumbs that melts in your mouth. You know there's gonna be a Rockfish Cook-Off in VB this December. You should look into it. It's hosted at our marina.
