Well, tog season is upon us and will only be getting better as the fall goes on. Tog makes the best ceviche I have ever had, so for those of you that tog fish and want to try something different, here goes.
Fillets from one big tog or several smaller ones, about 2#s
Four tomatos
One medium size onion
Two jalopenos
Four limes
cilantro
Dice fillets into small pieces
Squeeze four limes into bowl and add tog
Cover and put into frig for several hours
Dice tomatos, onion and jalopenos and place in bowl
Add fresh cilantro to taste
Mix fish, lime juice to veggies and salt to taste
Let sit in frig for several hours to have flavors mix or eat right away.
Pour margarita and enjoy
