    Default Smoked Hardhead

    Han anyone tried smoked croaker? Is it worth the effort? Sounds like it is worth trying. I love small smoked bluefish. Why not hardhead?

    They're a mushy fish,I don't know how they'd turn out.

    I smoked several last weekend and they were excellent. I butterflied them, sprinkled them with Old Bay and popped them into the smoker for 3 or 4 hours. They were so good I plan to try again with a different rub.

    I smoke croaker fillets every year. I use the same brine and method that I do for bluefish and they always turn out great.
