Simple but great. came up w/the idea after watching an episode of some food show about fried bread.
01. get a package of frozen "reddi dough" or whatever brand you have local. Its in the frozen brean section. three long bread dough's meant to make (3) loafs of white brean after rising. You are going to cut the unrisen loaf into three pieces and roll em into a ball after defrosting. Let them rise big in a warm place (2-3.5 hrs) and gently plop em into deep fryer 365 to 375 degrees. ( if you don't let em rise enough the bread will be denser and not as fluffy). You want em about 6-7" across. Fry em till underside gets brown, flip and fry top side. Remove from hot oil and put on plate covered w/ paper towels.
02. Deep fry your rockfish or any other you like for that matter. I fry in a dry mix not wet batter when making this sandwich
03. Place fried fish on cut fry bread bun, cover fish w/ shredded cabbage ( lettuce/tomato ok too if you like and choice of condiment. We use the " legal sea foods tartar sauce recipe" Lots of ingredients but worth the time, make it day before to let all the flavors blend, less throuble than making it day of too.
Ive got the legal seafoods cookbook but its probable online too.. You could also experiment w/ any other sauce I guess.
the bread balls you fried after letting them rise are warm and BIG so you can fit all your stuff on em without everything squishing out when you eat it. I cut the rock filet down the middle if its real thick at the head end before frying.
