9-1-1 smoked fish brine

9 parts water
1 part salt
1 part brown sugar

Mix together until salt and brown sugar are dissolved and add fish you intend to smoke and allow to marinate overnight. The next morning remove from the brine, pat dry and sprinkle the top of the fish with brown sugar prior to putting in smoker.
