I have a few fillets left over from last season. What are your favorite rockfish recipes?

If you check out the TF recipe site - there is a recipe for Striper Cakes.
Works great for frozen fillets that have been in the freezer for awhile.

Need to skin them and best to cut away the dark meat.

Cut off dark meat and then cut in to 2" blocks lightly old bay both sides put them on a plate and cover with a microwave plate cover then put in microwave set on high for 5 minites.
Then make the best fish sandwitch you ever made.

poach fish. cook 1/2lb bacon and drain set aside. saute diced 1 lg onion and 2 stalk celery. add 2 tbsp flour stir in. add 2 cups water or stock 3 cups halfnhalf. add i bayleaf, salt pepper, bacon, fish. simmer 20min.

hearty stew to warm the innards on a cold n blustery day!

Also, I did this:

1) Poach fish as you like it
2) Buy this stuff (if you are local to MD's western shore, I got some from Homestead Gardens in Davidsonville): http://www.vineandtable.com/gourmet-foods.aspx?source=GOOGLE&id=9338, OR buy similar, OR make similar
3) Mix together in amounts you like
4) Put under broiler for a bit until cheese in dip starts to bubble

Enjoy with chips or bread or whatever - easy and good!
