Use the thicker part of the fillet(top). Cut out any redmeat with a sharp flexible knife blade.
Coat both sides with melted butter.

Sprinkle on Paul Purdonnes Seafood Magic Blackening Spice. I think it says Redfish seasoning on outside of box. Available at all grocery stores.

Heat a cast iron skillet on side burner on gas grill for 5-8 minutes on med/high

Sear fillets for @ 4 minutes a side until each side is dark brown almost black. It will smoke a lot thats why the outdoor grill is great. If you use the oven in the house it will smell up the house.

put skillet in 350 degree pre-heated oven for 10 minutes. This will allow the center to get cooked.

The best I have ever eaten rockfish and I have tried it every way!!
