Just finished off the remains of a 1/2 bushel from the grill. Yummy  I got mine up in Deltaville. There is a guy who sets up on Rt 17 just past the first stop light once you cross the Coleman bridge into Gloucester.

I remember the first raw oyster i ever ate, or tryed to. Me and Dad were down at Benny Wallace's one day and there were these two guys sitting there on the porch with a bushell of oysters, shuck'n em and sliding em, well me being all of about7 or 8 years old looked at them and said" gee mister, those things look nasty, you really gonna eat that thing? The fellow looked at me and asked if I'd ever eaten raw oysters, shucked one of them big old chokers out and handed it to me, I looked up at Pop and he said it was OK, go ahead and eat it, I slid that bad boy down the hatch...been eat'n em ever since! Actually that thing came back up like it had a string tied to it, they laughed and handed me another one which I managed to keep down...I once heard it said that it was a brave man that ate the first one raw, and to this day believe that to be true.

There's a lot of "imitation" sea-side oysters around. Folks will keep farm raised/Gulf oysters overboard for a while, and it'll salt'em up... but, they'll never be as tender as a sea-side oyster.

One of my first memories is standing around a fire in my Grandfather's back yard. Four cinder blocks around the edge of the fire, and an old matress "spring" layed across it. An old coal shovel was used to toss the oysters on the fire... heck, probably a 1/2 bushel at a time... then they were covered with a soaked burlap sack. After a while, my uncles would pick up the spring and dump the whole mess on a sheet of plywood.... Saltines, vinegar, hot sauce and pepper... not a better oyster has been had.

Now, if someone can find a place I can buy a quart of those little red crabs you find INSIDE the seaside oysters, I'd be a happy man!

you eat em raw just like the oyster? I had some last year that each oyster had one in it, I tried em and did not like them at all, the taste stayed with me for three days. Tried em with tabasco and lemon
I eat them raw or steamed.

Raw is better though here is why.

I like to trap them between my gum and cheek and keep on sliding Oysters down. Once I get a dozen or so trapped I cut them loose so they can run around inside my mouth and pick my teeth for a bit, before I put the crunch on them. I then start over again.:D

Can you even buy Bay oysters? i thought all our oysters were seasides nowadays.
When you ask a seafood guy "Where did these oysters come from"?, he's probably thinking "Where do you want them to be from"?;-)
Unless you know the guy personally, he will tell you whatever you want to hear. Fact is, they will find the best oysters they can for the best price.
Some will say Back River is best, some say Rappahannock River is best, some say Louisiana is best.
Just like folks will tell you that the MD Blue Crab is best, or Virginia Blue Crab is best, or Florida Blue Crab is best.
Truth is, they are all the same doggone crab.:D
