Sounds like a bad switch or a corrosion problem at connections. Pumps don't run for no reason.

Agree with Bob H. Bad switch or bad wire harness
should be checked out asap:

From Personal experience with Merc:

Had a Merc that the trim switch got stuck in the down position while running,
I didn't realize this was happening until the motor stopped (could not hear the trim motor while running) turned around to look at motor & it was on FIRE (wire harness had melted & shorted all the wiring together ) fortunatly the fire was just the wire harness & insulation, the fuel did not ignite & we were able to get the fire out. had to replace the entire electrical system, wire harness, pack, stator etc $$$

Look very carefully at the connector the relays plug into. Corrosion or bent fingers will often result in motor trimming up or down on its own.

Troubleshooting

Next time it happens, disconnect the connector that goes to the controls at the helm with the red/blue/green wires. If this stops the trimming, the problem is in the switch or control wiring. If it continues to trim, then disconnet the plug for the switch on the cowl. If this stops it, than that switch is your problem. If the trimming still occurs, its either the wiring or the trim solinoids.
