Smoked Fish Dip
1 1/2 c crumbled smoked fish
1/2 c milk
8 oz lt cream cheese, softened
1/4 c minced onion
1 stalk chopped celery
1 tbs fresh parsley
3 tsp sweet pickle relish
1/2 tsp lemon juice
1 tsp Worcestershire sauce
minced jalapeno (to taste)
Cayenne, salt, and pepper to taste

Place the smoked fish in a bowl and add milk. Cover and chill for 30 min to an hour. Stir in cream cheese, onion, celery, parsley, relish, lemon juice, Jalapeno, Worcestershire and cayenne, salt and pepper. Taste and adjust seasonings. Cover and chill for 2-3 hrs till flavors have blended.
Serve with your favorite crackers......................

I made this on Fathers Day and it was a big hit. I used Rockfish but want to try with bluefish or mac's. Of course, recipes are just a guide so feel free to add or delete ingredients to your own taste....................Leon
