I'm smoking about 20lbs of striper fillets right now. I was wondering if any of you have tried a carolina style of sauce on smoked fish? Take carolina style sauce and spice it up a bit with sugar,apple juice. crushed red peppers, and a little cayene pepper, ma you got something good. Break up fish approx. BBQ size and sprinkle sauce on to taste. If you like a vinegar sauce you'll love it.:D
