Very healthy !
1-stick of butter
1-qt 1/2 and 1/2
2or3 shallots, diced fine
2or3 tbs flour
-oysters with all liquor, shallots,thyme,2tbs butter into pot
-warm until oysters are just cooked, fish them out with a slotted spoon and set aside
-add sherry, reduce liquid by ~60 to 75%, pour into a bowl and set aside
-3tbs butter and flour to make a light roux, add half and half and reduced oyster liquor
-cook until warmed through and thickened, add back oysters and a little (!) msg
Serve in bowls, or by IV with paprika on top or a grind of pepper and oyster crackers
If you eat this and don't feel healthy and happy, something's wrong !
